Healthy dip

This healthy dip will be a hit at your next party.
Layer it in a glass bowl or small trifle dish, if you like.
To avoid the dip becoming watery, be sure to drain the wet ingredients well.
Ingredients1 (8-ounce) container hummus
1 cup firmly packed baby spinach, roughly chopped
1 cup thinly sliced roasted red peppers, drained
1 (6-ounce) jar marinated artichoke hearts, drained and roughly chopped
1 cup plain lowfat or nonfat Greek-style yogurt
1/2 cup sliced pitted black olives, such as Kalamata
1/4 cup thinly sliced green onions
1/4 cup crumbled feta cheese Pita chips
Spread hummus evenly in the bottom of an 8-inch square dish. Scatter spinach over the top and press down lightly. Arrange peppers, then artichokes hearts over the top. Drop yogurt in dollops over the artichokes, then spread out to make an even layer. Sprinkle with olives, green onions and feta and serve with pita chips on the side.

Egg Curry

Egg curry , there are a lot of variations and my husband loved it when i made last night.
Ingredients
6 Eggs
1 onions
2 cups crushed Tomatoes
2 tea spoons garam masala
1green chillies
1 cup cashew nuts
1/4 cup oil
salt to taste
turmeric pinch

Procedure
Boil Eggs and keep separate .
Take 3 tbsp oil fry chopped onions
after they fry to golden brown add crushed tomatoes.
once you notice tomatoes simmering add green chillies , cashewnuts powder, garam masala , salt and chilli powder and turmeric. Add cooked and shelled eggs to the above.
Let it simmer , add half cup water to it to make it gravy.
garnish it with chopped coriander.

Moong Dal

Ingredients
2 measure of Moong Dal
Cilantro chopped 2 tea spoons
salt
Ghee ( Clarified Butter)
Cumin ( jeera)
Lime or Lemon Juice
A pinch of turmeric

Pressure cook 2 cups of dal with 3 cups of water
After its cooked , pour some water to the cooked dal to get it to soup consistency.
Take clarified butter and put Cumin and turmeric . Once roasted put it in the soup.
at this point add the chopped cilantro and lemon juice.

Slight variation to this you can roast onions and add to it.

Cottage Cheese Pakoda

Ingredients
1 Measure cottage cheese
1 Measure all purpose flour
1 big onion chopped
1 tea spoon jeera2
green chillies chopped
2 tbsp pickled jalapenos
salt and chilli powder as required
chopped cashew nuts half cup.
ProcedureMix all the above ingedients into a batterdeep fry and take them out .serve them with yummy chutney or ketchup

Black eye pea vadas

Ingredients
2 Cups blackeye peas
4 green chillies
1/2 inch ginger
salt to taste
Oil for deep frying.
Procedure1.
Soak the Blackeye peas for 5 hrs.
2 Grind all the ingredients except oil into a thick paste , with minimal water.
3. Make them into a vada shape and deep fry them
4. Enjoy them with pea nut chutney
